Akita
Deep Snow, Ancient Sake
Akita receives some of Japan's heaviest snowfall, and its sake brewers have turned that fact into an art form. The cold winters, pure mountain snowmelt, and generations of dedicated toji — master brewers — have produced a sake tradition that now draws collectors and sommeliers from London and Singapore. Aramasa, operating in Akita City, is perhaps Japan's most discussed brewery at the moment. Away from the city, the forests and mountains of Akita preserve one of Japan's finest onsen clusters and one of its most intact samurai districts.
Reserved, patient, and quietly magnificent. Akita does not announce itself — it simply rewards those who arrive prepared to notice.
